| Fermentation is the transformation of the sugars into alcohol. After a fortnight in stainless steel tanks, the juice acquired ± 5° alcohol. The fermentation is then stopped and the juice is clarified and filtered. The juice of each tank has its own characteristics. That is why it has to be mixed with others in order to guarantee an equal taste and quality. It is then filtered to ensure a perfect conservation at the time of the bottling. |
